The King Cake Tradition

The South Louisiana tradition of celebrating Mardi Gras is known throughout the world. Along with the Mardi Gras balls and parades, the sharing of king cakes has become a major ingredient of the Mardi Gras season. The Mardi Gras season actually begins on January 6, the Feast of the Epiphany or the Twelfth Night. This is the night the three kings arrived with the gifts for the Christ Child. The s eason continues on through Fat Tuesday, the day before Ash Wednesday. Mardi Gras day is the final celebration before Christians begin the Lenten season.

King Cakes were first associated with Mardi Gras by the Twelfth Night Revelers of New Orleans during the 1870 celebration. A King Cake with a golden bean inside was sliced among the ladies of the court, and the woman whose slice contained the bean was crowned the Queen of the Festivities.

Most King Cakes now contain plastic babies and tradition has it that the person receiving the slice with the baby inside is obligated to buy the next cake.

We at Keller's Bakery believe not only in wholesome tradition, we also believe in fine eating. At Keller's each king cake is individually made from our own Danish pastry, filled with our own specially made fillings, rolled, proofed, baked, and iced using only quality ingredients. We decorate each cake with the traditional Mardi Gras colors of purple for justice, gold for power, and green for faith. We sincerely hope you enjoy this one.

For safety reasons, Keller's will no longer bake a baby inside of the cake. The person purchasing the cake will be given a baby that they can insert. This is done by taking any small knife, making an incision on the underside of the cake and inserting the baby. Since there is a foreign object in the cake, caution should be used when eating the product, especially with children.

About Keller's

Hardships befell the Keller family as they settled in south Louisiana in the late 1760s after fleeing from France. The first Keller's Bakery was opened in the 1890s by Victor Keller. They have had multiple locations over the years, from New Orleans to Abbeville, but the only two remaining locations are both nestled in the Lafayette area. Many of the recipes they use today that have been passed from generation to generation are unchanged, some dating back over a hundred years. At Keller's you'll find the traditional sweet treats and delicate pastries you'd expect from a French bakery, but you'll also find savory filled pies featuring some of the most prized assets of the region, crawfish. Keller's sells some of the best King Cakes in the area .
